Coquilles St. Jacques

Coquilles St. Jacques and scallops Mornay are two  delicious scallop dishes, similar yet distinctive.  The cheesy flavor of mornay or the subtle flavors of the stock in the Coquille St Jacques.  Both are satisfying yet I think there is more flavor in the Coquille St Jacques.  It gets it flavor from the velouté sauce at it’s base.  A little bit of work but worth the effort.  

It can be served as an appetizer or a main course.  1½ pounds of scallops will produce 8 appetizers or a main course for 4.

Ingredients for Coquilles St. Jacques

  1. 1 ½ pounds bay scallops rinsed
  2. ¾ cup white wine
  3. 1 -1½ cups water
  4. 1 bay leaf
  5. 1 shallot minced
  6. ½ tsp salt
  7. ¾ cup Heavy cream
  8. 4 Tbs butter
  9. 4 Tbs flour (all purpose)
  10. salt & pepper to taste
  11. 1-1½ cups shredded swiss or gruyére

Directions for Coquilles St. Jacques

In a large sauce pan combine the wine, water, bay leaf, shallot and about ½ tsp of salt.  Bring the mixture up to a slow simmer and allow to cook for about 5 minutes.

Add the scallops to the broth and bring back up to a simmer.  Once a simmer is reached cook for about 1 minute then remove from heat and allow scallops and broth to cool for about ten minutes.

After ten minutes remove the scallops to a bowl and return the liquid to heat bringing up to a boil and reduce until you have about 1 cup of liquid remaining.

While the liquid is reducing, in another sauce pan place the butter and when melted add the flour and mix and cook until all the flour is combined and begins to slightly brown.

Once the liquid is reduced, off heat add to the butter& flour roux and whisk to combine, then add the heavy cream and stirring constantly put back on heat and slowly up to a boil.  As it reaches boiling it will begin to thicken.  When thickened remove from heat and add about ¼ cup of the cheese, stirring to melt an combine.  Add in the scallops and mix completely.

Ladle equal amounts of the mixture into scallop shells or ramekins, spoon remaining sauce over the top and divided the rest of the cheese over the top of each shell or ramekin.

At this point the dish may be set aside in the refrigerator until ready to serve.

To cook set your broiler on high and broil the scallops 4-10 minutes depending on how far from the heat you have them.  They are done when the cheese begins to lightly brown and the sauce is bubbling.  If broiling directly from making, keep them close to the heat to brown the top.  If the scallops are room temperature lower them so they can heat up before the tops begin to brown.

Ingredients

Simple Baked Artichoke Hearts Appetizers

 

 I posted this recipe as a deep fried item about a year ago. Trying to lighten my menu I thought to substitute baking instead of frying like we did for the Scotch Eggs.They came out great.  I really like this recipe, these have always been a favorite hors d’oeuvre for parties but was always a hassle as I had to fry them almost to order and watch the hot oil.  This recipe takes that all away.  By cutting out the frying, they are not as oily and they bake crisp and taste just as good.  For parties you can bread them the day before and simply pop into the oven about 10 minutes before you want to serve them.  The only “special”  equipment you’ll need is a sheet pan and a wire rack that fits into the pan.

 

 

Ingredients for Artichoke Heart Appetizers

  1. 1 can large  artichoke hearts 6 – 8 count ( smaller chokes tend to fall apart too easily)
  2. 2 eggs
  3. ½ cup all purpose flour
  4. 2 cups panko bread crumbs
  5. 1 stick butter
  6. 2 -3 garlic cloves finely chopped
  7. 2 -3 Tbs Parmesan cheese
  8. 2-3 tbs lemon juice
  9. 2 Tbsp capers (Optional)

Directions for Artichoke Heart Appetizers

For the lemon garlic butter, take the butter and garlic and lemon juice and melt and combine in a small sauce pan.  Add the capers as an optional item. 

In 3 bowls, large enough to accommodate the ingredients, place the flour in one, eggs whipped with a little water added to make a wash in another, and the panko bread crumbs in the third.

Take the artichoke hearts and cut them in half ,length wise. Working in small batches  place the halves into the flour , then into the egg wash and finally into the crumbs to completely coat.  Place finish chokes into a bowl to hold.  You can make them the day before and hold in the refrigerator.

Preheat oven to 375°

Place the wire rack in the sheet pan and arrange the artichoke hearts in a single layer on the rack.  Bake for about 10 minutes.  With tongs or a fork roll each one in the garlic butter.  Drizzle a little more butter over the top of each choke and lightly dust with Parmesan cheese.   If you are making larger amounts simply multiply the ingredients proportionally.

Sausage and 3 Cheese Bread

The original sausage and cheese bread recipe we have, came from my wife’s sister.  Over the years we have changed it slightly.  It makes a  great lunch or dinner and a fantastic hors d’oeuvre for a party.  Served warm it’s great and it is easy to rewarm and serve the next day.  Most grocery stores today sell pizza dough and if yours doesn’t a lot of pizza stores will, or as a last resort you can make your own.  We usually make a large batch and freeze them in individual bags and thaw as needed.

For the sausage you have many options.  You can use an italian sausage removed from the casing (mild or hot), or your favorite style, we like Jimmy Dean’s sage sausage it gives a great flavor and isn’t too greasy.

Ingredients for Sausage and 3 Cheese Bread

  1. 1 recipe pizza dough
  2. 1 pound loose Sausage meat 
  3. 1/2 cup Mozzarella diced small
  4. 1/2 cup Asiago diced small
  5. 1/2 cup grated Parmesan
  6. 1/2 cup fresh parsley chopped
  7. 2 eggs

Directions for Sausage and 3 Cheese Bread

Preheat oven to 350°

Fry up the sausage breaking it up into small pieces.  Once cooked drain and place into a bowl.  Add the cheeses, parsley and one egg and combine completely.

Roll the dough out to about a 12 X 9 rectangle. for easiest results place the dough onto the baking sheet before forming the log.  Place the sausage in the center of the dough and pull the long sides of the dough up and over the sausage forming a roll.  Now fold the ends up and over to encase and seal.  Turn the roll over so that the folded seam are on the bottom.

Beat the second egg and brush over the top of the roll.

Now this is a great way to start a party!  Almost  a little too spicy for a SAPP (Scotish American Puppy Princess) but I did enjoy it greatly.  A 5 paw recipe for sure!
