Teriyaki Steak

Teriyaki steak is not a throw together meal.  it does take a little forethought and time to prepare, but the results are usually spectacular.  A well thought out marinade, done not too long, a properly cooked steak, and a delicious glaze all combine to transform an ordinary steak into a truly great meal.  It works particularly well with top sirloin steaks and as in this recipe with the Tri-tip top sirloin.

Ingredients for Teriyaki Steak

For the Marinade:

  1. 1 cup Soy sauce
  2. 3 -4 Tbs garlic salt
  3. 3 -4 Tbs fresh cracked pepper
  4. ¼ cup Turbinado sugar (sugar in the raw)
  5. 1 tsp ground ginger (optional)

For the glaze:

  1. 2 Tbs soy sauce
  2. ¼ – 1 cup dark brown sugar
  3. ½ tsp ground ginger (optional)

Directions for Teriyaki Steak

For the Marinade:

When I put meat into marinade I like to “Jaccard” the meat ( by piercing with a fork to help break up the connective tissue and allowing the marinade to penetrate the meat).

Find a pan that will hold all the meat in a single layer.  Pour the soy sauce into the pan, if using the ginger add in and stir to combine, place the steaks in and then turn so that both sides are wet.  Sprinkle the top with the garlic salt, pepper and ½ the sugar.  Allow to sit for about half an hour, then turn and season the other side.  Marinate for another half an hour, then turn and rotate sides soaking in the marinade every hour.   Marinate for 4 – 5 hours.

You can also use a large plastic storage bag to marinate the meat just be sure to rotate every hour or so and be sure to have it on a plate or dish to guard against leaking.

For the Glaze:

Put ingredients into a small sauce pot and on low heat melt the sugar and stir to combine.  You want a very thick sauce , if it looks to thin add more sugar until you have the consistency you want.  Keep warm.

Cook the steak in any manner you are comfortable with either grilling or under a broiler.  Cook to your desired amount of doneness.  Remove from the grill if using a larger piece of meat allow to rest for 10- 15 minutes, Individual steaks can be serve almost right away.

Once the steak is removed from the grill baste the top with the glaze and serve the extra glaze in a sauce boat on the side.

Christmas Tree Cookies

I still am in the learning stages of decorating cookies.  It’s a rather tricky process of gaining expertise in the icing and their use.  I circumvented a big chunk of the decorating in this recipe by coloring the dough instead of applying a green icing over the entire cookie.

 

 

Ingredients for Christmas Tree Cookies

  1. 3 ¾ cups all purpose flour
  2. 1 tsp baking powder
  3. ½ tsp salt
  4. 1 cup softened butter
  5. 1 ½ Cups granulated sugar
  6. 2 whole eggs
  7. 1 Tbs vanilla
  8. 1+ tsp dark green food coloring

Directions for Christmas Tree Cookies

Preheat oven to 400º

In a large bowl combine the flour, baking powder, and salt.

In the bowl of a mixer cream the butter and sugar .  With the mixer on low add the eggs one at a time and combine thoroughly  .

Add the vanilla and the food coloring mix well.  With the mixer on low, slowly add the dry ingredients and mix until a dough forms. If it looks too light green add a little more coloring.

Divide the dough in thirds and wrap in plastic wrap and refrigerate for at least 3 hours to overnight.

On a well floured surface roll the dough out to about a ¼ inch thickness and using a Christmas tree cutter cut out the shapes and place on a lightly greased sheet pan or one with a silpat.  You can decorate with sprinkles at this point or wait until cookies are cool to ice or do both.

Bake for 8 – 10 minutes until the edges begin to lightly brown.  Remove from the oven and carefully place on a cooling rack to cool completely

Once cooled decorate as you wish.  For the ones in the picture I used Royal Icing.

There are a number of different recipes for Royal Icing, which is an icing that will harden rather quickly and is great for decorating.  For ease in making I use the meringue powder, or when I can find it pasteurized egg whites.

Grilled Green Tomatoes

After a trip to the green grocer that resulted in a successful recipe of grilled eggplant parmesan, I thought why not try making Grilled Green Tomatoes?

Believe it or not they came out pretty good.  There is no real recipe needed.

Simply take green tomatoes and slice them thickly, lightly oil both sides so that they won’t stick on the grill, and season with salt and pepper.  You can also add seasonings of your choice and in a plastic bag with the oil marinate the tomatoes for an hour or so before grilling.

Stick on the grill and cook on a very hot grill until they produce grill marks and turn easily.  Flip cook the other side and when done serve.

Serve plain or with sour cream or créme fraîche, or really any type of sauce that suits your fancy.
