Prime Rib Hash

Every year believe it or not, we do end up with left overs from our Christmas Prime Rib Dinner.   Full slices warmed briefly in a beef and mushroom stock make a great second meal.  

I always buy my rib with the bone on as these make great treats for well-behaved fur babies.  Unfortunately the Official Taste Tester is not and can get very cranky if you try to take a bone away or keep it out-of-doors.  So the only option is with the tidbits to cut the meat off the bones and using a grinder  grind up the left over meat and add potatoes and onions , maybe some spices and “presto” prime rib hash.

Ingredients for Prime Rib Hash

  1. Left over meat ground.  (amount will vary so adjust all other ingredients).
  2. Diced cooked potatoes or canned
  3. 1 large onion diced
  4. 2-3 Tbs chopped parsley
  5. Salt & Pepper to taste
Optional Ingredients
  1. ¼ to ½ cup left over gravy
  2. finely diced cooked carrots
  3. Thick slices of Tomato
  4. Eggs cooked to your preference.
  5. OR any ingredient you feel will go well with the beef.

Directions for Prime Rib Hash

Using a grinder, grind the meat coarsely.  Add the remaining ingredients and mix well.

Place the hash in a non stick pan in a thin layer and on medium heat cook until hot.  Serve

For a complete meal place thick slices of lightly salted tomato over the hash place a overeasy egg on top.

Savory Bread Pudding

My son came to visit and we needed different dinners every night.   So once he went back up north, I was inundated with an abundance of leftovers.  My favorite pass time is to try and figure out different combinations to use up leftovers and this was a winner on two counts, it used up a lot of stuff and it tasted great.

I had a tupperware of steamed broccoli, another of roasted carrots, in another about a cup and a half of chicken gravy, a small baguette of garlic bread,some leftover slices of sharp cheddar cheese, in another a small amount of sour cream.

I cubed the garlic bread and placed it into a large bowl, added the broccoli and carrots and gravy and added about  1 Tbs of rosemary and 1 Tbs of sage mixed this up well and then added about 1 1/2 cups of milk into which I scrambled 4 eggs to form a custard.  Combined everything well.  Placed everything into  a 9 X 9 inch baking pan that was greased with vegetable spray, put the cheddar cheese slices on top, and placed in a 350° oven for about 45 minutes until the custard was set.  Once set I took it out of the oven and let it sit for a few minutes, then served with sour cream.

Not exactly gourmet but it certainly ended up as a easy and tasty way to use up the leftovers.  Hopefully this will give someone out there ideas of their own.  Substitute creme fraiche for sour cream,add whatever you think will go together well and with a few herbs and spices perk it up for a great dinner.

I do love carrots, the green stuff not so sure but it was covered with chicken gravy and custard, yummy!  I personally would have hidden a nice beef bone inside but then I’m not the chef.  5 paws even with out the meat.

Baked Spaghetti & Egg

Well we have moved all our stuff in, now just a matter of cleaning and figuring out where to put everything.  Not an easy task at all.

The simplest menu of late has been spaghetti and sauce, quick, easy but it does leave a lot of left overs especially if you have the same thing a few days in a row.  So here was a quick fix to that problem, baked spaghetti & egg.  Mix it all together add an egg for a little more protein and voilà another quick dinner and only one pan to clean up.

Directions

Take enough left over spaghetti and sauce to feed the number of people you are serving, and mix in a bowl.  Place the mixture into a baking dish, sprinkle a little Parmesan over the top cover with foil, and bake at 350° for about 30-45 minutes until hot.  When heated using a spoon create slight indentations in the spaghetti and crack an egg per person into the well.  Leaving the foil off bake in the upper third of the oven for up to 15 minutes until the eggs set and cooked to your liking.

Ingredients
  1. cooked spaghetti
  2. spaghetti sauce
  3. Parmesan cheese
  4. egg
Instructions
  1. In a large bowl mix the left over spaghetti and sauce until well blended, place into a baking dish sprinkle Parmesan cheese over top, cover dish and bake at 350 for 30- 45 minutes until hot.
  2. Press a spoon into the spaghetti to form indentations for eggs, add the eggs and bake up to 15 minutes in the upper third of the oven, until eggs are set and cooked.
