Cottage Pie

The derivation of the term was for a recipe using potato as a upper and lower crust for use with leftover meat, found in cook books circa the 1750’s.  The  more commonly called Shepard’s pie today, especially with the use of Lamb, wasn’t coined until late in the 19th century.  It has evolved into a dish that stands alone and is delicious.  Although a number of the recipes you’ll find, are made by making mashed potato for the dish, I usually turn to this recipe when a large amount of left over mashed potatoes are in the fridge.  You can substitute lamb for the ground beef in this dish, add more vegetables if you like, adjust the seasoning to suit your taste.  There are no cottage pie police roaming in your neighborhood.

Ingredients for Cottage Pie

  1. 1 1/2 pounds lean ground beef
  2. 2 Tbs cooking oil
  3. 1 onion finely diced
  4. 1 clove garlic minced
  5. 2 Tbs tomato paste
  6. 2 Tbs all purpose flour
  7. 1/2 cup beef broth
  8. 2 carrots finely diced
  9. salt and pepper to taste
  10. 2 Tbs Worcestershire sauce
  11. 3 -4 cups mashed potatoes

 

Directions for Cottage Pie

In a large sauté pan on medium high heat add the cooking oil the onion, and garlic,  and carrots and cook until the onions become translucent.  Add the tomato paste and cook for a few minutes.  Add the flour and cook until all the flour is combined.

Add the ground beef and cook until no longer pink.  Once the beef is cooked add the beef broth and stir to combine.  You should have a thick sauce, if too thick add a little more broth.  Now add the Worcestershire sauce, taste and adjust seasoning.

Place the mixture into a 9 inch pie plate and cover with the mashed potatoes, ( don’t smooth the potatoes leave peaks and valleys).

Place into a 400° oven for about 30 minutes, until  the dish is hot and the potatoes are lightly browned on top.

Macaroni and Beef

I think macaroni and beef is more American than apple pie.  Generations have been raised on the simple and inexpensive concept of ground beef and elbow macaroni.  It’s healthy and filling and on a per serving basis relatively cheap.

There are no rules, feel free to experiment with different spices and herbs to find your own personalized recipe.  The same goes for the cooking method. mix the cheese in and do it all in one pot or layer the macaroni in a baking dish cover with cheese and bake, or do both it’s up to you.  Here’s my version I like to do a one pot meal (doing it all in one pot makes clean up easy),but if you like bake it.

Ingredients for Macaroni and Beef

  1. 1 1/2 -2 pounds of lean ground beef
  2. 1 pound grated cheddar cheese ÷ 2
  3. 1 pound elbow macaroni cooked al dente
  4. 2 -14 oz cans diced tomatoes
  5. 1 cup ketchup
  6. 1 medium onion diced
  7. 1 clove garlic minced
  8. 1 tsp allspice
  9. 2 tsp crushed rosemary
  10. 1 tsp cumin
  11. 1 tsp sage
  12. 2 Tbs Worcestershire sauce
  13. Salt and pepper to taste
  14. 2 -3 Tbs canola oil

Directions for Macaroni and Beef

In a large pot cook the elbow macaroni.  Once cooked empty, into a colander and set aside.

Add the canola oil to the pot, let it get hot the add  the ground beef,onions, garlic , allspice,rosemary, cumin, and sage and brown the beef .  When the beef has browned add the canned tomatoes,ketchup,and Worcestershire sauce.  Check seasoning and adjust with salt and pepper.  Put the cooked macaroni in and stir to combine.  Now add half the cheese and mix completely.

You can now serve with a sprinkle of the remaining cheese on top of each portion or put into a 9 X 13 baking pan layer the cheese on top and bake for 30 minutes at 350° or until the mixture is hot and the cheese is melted.

Sausage and 3 Cheese Bread

The original sausage and cheese bread recipe we have, came from my wife’s sister.  Over the years we have changed it slightly.  It makes a  great lunch or dinner and a fantastic hors d’oeuvre for a party.  Served warm it’s great and it is easy to rewarm and serve the next day.  Most grocery stores today sell pizza dough and if yours doesn’t a lot of pizza stores will, or as a last resort you can make your own.  We usually make a large batch and freeze them in individual bags and thaw as needed.

For the sausage you have many options.  You can use an italian sausage removed from the casing (mild or hot), or your favorite style, we like Jimmy Dean’s sage sausage it gives a great flavor and isn’t too greasy.

Ingredients for Sausage and 3 Cheese Bread

  1. 1 recipe pizza dough
  2. 1 pound loose Sausage meat 
  3. 1/2 cup Mozzarella diced small
  4. 1/2 cup Asiago diced small
  5. 1/2 cup grated Parmesan
  6. 1/2 cup fresh parsley chopped
  7. 2 eggs

Directions for Sausage and 3 Cheese Bread

Preheat oven to 350°

Fry up the sausage breaking it up into small pieces.  Once cooked drain and place into a bowl.  Add the cheeses, parsley and one egg and combine completely.

Roll the dough out to about a 12 X 9 rectangle. for easiest results place the dough onto the baking sheet before forming the log.  Place the sausage in the center of the dough and pull the long sides of the dough up and over the sausage forming a roll.  Now fold the ends up and over to encase and seal.  Turn the roll over so that the folded seam are on the bottom.

Beat the second egg and brush over the top of the roll.

Bake at 350° for about 1/2 an hour until top is golden brown.

Now this is a great way to start a party!  Almost  a little too spicy for a SAPP (Scotish American Puppy Princess) but I did enjoy it greatly.  A 5 paw recipe for sure!
