While still on the quest to find affordable housing, we are definitely using up every thing in the freezer and pantry.  So here’s a meatloaf recipe to add a little flavor to a simple dish.  For years we had a recipe for meatloaf that used wheat germ in it.  It was tasty but had a number of after effects, so I’ve worked a different version that’s a little less unbinding.

This one like many recipes is not written in stone.  I probably would have added onions, that had been sautéed, if we had them.  The amounts of ingredients are also subject to interpretation, the bread crumbs could vary quite a bit, it’s really all about cooking by “eye”.  You could also vary the meat by adding ground pork or veal into the mix.  Feel free to experiment.

Ingredients for Meatloaf

  1. 2 #’s ground beef fairly lean
  2. 2 eggs
  3. ¼ cup whole milk
  4. 1 Tbs garlic salt
  5. 1 Tbs pepper
  6. 3 -4  Tbs Worcestershire sauce
  7. ½ cup ketchup
  8. 3 – 6+ cups Italian style Panko bread crumbs
  9. ¼ – ½ cup BBQ Sauce

Directions for Meatloaf

Mix the beef, eggs, milk, salt and pepper, Worcestershire sauce and ketchup thoroughly.  Begin to add the Panko bread crumbs and combine, continue until you have slightly moist not wet mixture that holds together well.

Place into a loaf pan and press to even out.  Pour a layer of BBQ sauce about ¼ of an  inch thick over the top.  Bake for 50 – 60 minutes in a 350° oven.  When done remove from oven and let sit to rest for a few minutes before slicing.

Be adventurous try adding finely diced carrots, or diced green chilies, celery, diced pepper of any color, sautéed onions the list goes on.

Ingredients

Bow Tie Pasta with Ham + Peas

One of the great things about a baked ham is the leftovers.  So many choices of what to do, so many great recipes.  This one is a classic just a few ingredients simple to make, you can even do this all in one pot, so there’s less work for the scullery maid.

Ingredients for bow ties with Ham + Peas

  1. 1 12 oz or larger box of bow tie pasta
  2. 1 medium onion diced
  3. 2 cloves garlic minced
  4. 1 -2 cups frozen peas
  5. 1 – 2 cups Diced ham
  6. 2 cups cream
  7. 3 Tbs butter
  8. 3 Tbs flour
  9. Parmesan cheese to grate over dish
  10. salt & pepper to taste

Directions for Bow Tie Pasta with Ham+ Peas

In heavily salted water cook the pasta.

While the pasta is cooking prepare the other ingredients.  Dice the onion, garlic in one bowl, the ham in another, and measure out the rest of the ingredients.

When the pasta is cooked to your preference drain in a colander.  Put the pot back on the burner on medium high heat add the butter when melted add the onion and garlic and cooked until softened.

Once the onion and garlic are softened, add the flour and stir until all the raw flour is combined, continue to cook for a minute or two more.

Add the cream and whisk until sauce begins to boil and thicken.  At this point add the peas and ham and cook to heat.  Once the ham and peas are heated, add the pasta back into the pot, stir to combine all the ingredients.  Taste and adjust the seasoning at this point.

Serve with Parmesan sprinkled lightly over the pasta.

 Ham was on sale at the grocer’s so we bought one.  Honey baked has always been a holiday favorite so I thought some sort of sweet glaze and gravy to go with it.  So I came up with the following recipe, baked ham & coca-cola and orange gravy.  It’s sweet, goes great with the ham and is easy to assemble.  The ham called for being baked about 20 minutes per pound and it was 7 pounds so the entire process baked for about 2 hours 20 minutes at 325° so this worked well for the gravy.  I used a large cast iron fry pan to bake the ham in and it works well, it holds the heat and shortens the time to make the gravy.

In a large cast iron fry pan, place the ham and score the rind in a diamond pattern.

Coca -Cola and Orange baste & gravy

Ingredients:

  1. ¾ cup Orange juice
  2. ½ cup brown sugar
  3. ¼ maple syrup
  4. 12 oz. Coca -Cola
  5. Pinch of salt & pepper
  6. 3 Tbs butter melted
  7. 3 Tbs flour

Combine all the ingredients, except the butter and flour, in a pot and bring up to a boil, stirring constantly to keep the sugar from burning.  Keep a close eye on pot as it may boil over as it nears boiling temperature, if it appears about to do that, remove from heat for a moment.  Continue to cook on a slow boil and reduce sauce by about ½.

Once reduced allow to cool and then pour over the ham.  Place the ham in the preheated oven and bake according to package directions.  Baste the ham every 10 -15 minutes until done.

When done remove the ham to a cutting board and cover with foil.  The sauce in the pan should be now reduced to about 1 cup, if it appears to be less add a little more orange juice.

Place the pan with the juice onto the stove top burner and turn to high.  Mix the flour with the melted butter stirring until you have a smooth paste roux.  Spoon the roux into the sauce and whisk until it thickens.  Strain through fine mesh sieve and serve on the side.
