Easy Apple Cake

Quite a while ago while surfing through the vast world-wide web for an apple cake recipe , I found a couple of recipes for cakes with pie filling that were very simple.  I had my reservations about the outcome, but today being out of brown sugar for crumble topping and Nabisco wafer and heavy cream for a birthday cake, my options were diminishing quickly so I thought it was a good time to try.

This recipe is just about fool-proof and probably works best in a bundt pan but the possibilities are endless with so many variations of fruit and cake batter.

For this recipe I used two 8″ cake pans and a little buttercream frosting to glue the two together with powdered sugar on top so that it looked more like a birthday layer cake, but it will work fine in a 9 X 13 , bundt or angel food pan as well.  Just watch the cake for timing.

Ingredients for “Easy as Pie” Apple Cake

  1. 1 box Cake mix- for this recipe white or yellow
  2. 1 can Pie filling-for this recipe Apple
  3. 3 large eggs

Directions for “Easy as Pie” Apple Cake

Preheat oven to 350º.

Grease and flour cake pan.

In a large bowl combine the cake mix, pie filling and eggs and fold the mixture together until all the ingredients are combined and a moist batter is formed.

Pour into cake pan and set in the center of the oven for approximately 30 minutes.  Cake will be done when a toothpick inserted into the center comes out clean.

Remove to a wire rack to cool slightly, then turn the cake carefully out of the pan.

Chocolate Peanut Butter Cookies

Nothing goes better together than peanut butter and chocolate, and these cookies prove that.

Ingredients for Chocolate Peanut Butter Cookies

This recipe will produce 60+ cookies with a #100 scoop.

  1. 1 cup butter softened
  2. 1 cup Peanut butter
  3. 1 cup granulated sugar
  4. 1 cup brown sugar (packed)
  5. 2 eggs
  6. 1 tsp vanilla
  7. 1 tsp salt
  8. 1 tsp baking soda
  9. 3 cups all purpose flour
  10. ¹⁄3 cup cocoa powder

Directions for Chocolate Peanut Butter Cookies

Preheat oven to 350º

In the bowl of a mixer with paddle attachment, cream the butters.  Once creamed beat in the sugars on slow until fully combined.  Add the eggs one at a time, then add the vanilla.

In a separate bowl combine all the dry ingredients, Flour,salt and baking soda, and cocoa powder lightly mix and slowly add to the mixing bowl until a dough forms.

Using either a #60 or #100 scoop or a teaspoon place balls of batter on an ungreased cookie sheet.  With a lightly floured fork gently press the balls flat with a crisscross pattern.

Bake in the center of the oven for 12- 15 minutes until the cookies are cooked through, allow to sit for a minute or two on the sheet pan before removing to a wire rack to cool completely.

Store in an air tight container, but do not store with any other type cookies.

Ham and Peas à la King

Here’s another great way to use up left over ham.  Served over toast, English muffins or rice it  makes a filling meal and is fairly easy to prepare.

Ingredients for Ham and Peas à la King

The ingredients for this recipe should serve approximately 4 persons.

  1. 2 cups diced cooked ham
  2. 2 cups peas
  3. 5 Tbs butter
  4. 5 Tbs all purpose flour
  5. 3 carrots finely diced
  6. 1 medium onion diced
  7. 1 clove garlic minced
  8. 4-5 green onions finely sliced (white and light green parts)
  9. 1-2 tsp salt and pepper to taste
  10. 3 cups chilled milk or ½&½
  11. ¼ cup grated Parmesan cheese

 Directions for Ham and Peas à la King

In a large sauté pan melt the butter on medium heat.  Add the onion and carrot and cook until the carrot is slightly soft ( approximately 5- 10 minute).

Add the garlic and 1 tsp of salt and pepper each, and cook for about 2 minutes.

Sprinkle in the flour and stir to combine until all the raw flour is incorporated.  Continue to cook for a few more minutes to cook off the raw flour taste.

Bring the heat up to medium high and add the milk and stir to dissolve the roux.  Continue to stir as the milk heats and thickens.  Once bubbles appear the sauce should be thick, remove from the heat.  Add the ham and peas, the green onions, and Parmesan and stir to mix and heat the peas and ham through.

Taste and adjust seasoning if necessary.

Serve over English muffins, toast or rice.

Alright this obsession with all things green has really got to stop.  The Ham, the sauce, the muffin were fine and it was fairly easy to eat around those little green balls, but Oh! so time consuming.
