BBQ Spare Ribs

It doesn’t matter if you are using baby backs or St. Louis style ribs the true secret to tender fall off the bone great tasting ribs is “Low and Slow and Covered”.

Try this recipe next time making ribs in the oven and you’ll never make them any other way again.

Ingredients for BBQ Spare Ribs
  1. 1 or 2 racks of ribs
  2. 3-4 Tbsps Dijon mustard
  3. 2 tsp salt & pepper each
  4. Good Chili Powder
  5. Your favorite BBQ Sauce
Directions for BBQ Spare Ribs

Take a sheet pan and line it with aluminum foil, since it is going to be a long time cooking you may want to double line the pan with foil.

About 1 hour before cooking, place the rack of ribs on the sheet pan and pat dry with paper towels.

Brush the mustard onto both sides of the ribs,  Now very lightly salt & pepper the rack.

Taking the chili powder put a fairly concentrated layer on both sides of the rack ending with meat side up.

When you are ready to cook place the ribs in a 275º oven for about 1 hour.

After an hour remove from the oven and tent the sheet pan with more foil making sure you have a tight seal all around the pan.

Place the ribs back in the oven for 2 more hours.

At the end of the 3rd hour, remove from the oven and cover the top of the rack with a layer of BBQ sauce.  Retent making sure the foil is not in contact with the ribs and there is a tight seal on all sides.  Place back into the oven for an additional 1 hour.

At this point the ribs should be done and should read at least 145º on an instant read thermometer and are ready to cut and serve, but if you want you can put on broiler for a minute or two to crisp up the sauce, or you can make them in advance and apply more BBQ sauce and place them on the grill to heat up.

Cut individual ribs between the bones and serve.  Depending on how big an eater you are serving one rack can be for one or two people for a main course.

 Ham was on sale at the grocer’s so we bought one.  Honey baked has always been a holiday favorite so I thought some sort of sweet glaze and gravy to go with it.  So I came up with the following recipe, baked ham & coca-cola and orange gravy.  It’s sweet, goes great with the ham and is easy to assemble.  The ham called for being baked about 20 minutes per pound and it was 7 pounds so the entire process baked for about 2 hours 20 minutes at 325° so this worked well for the gravy.  I used a large cast iron fry pan to bake the ham in and it works well, it holds the heat and shortens the time to make the gravy.

In a large cast iron fry pan, place the ham and score the rind in a diamond pattern.

Coca -Cola and Orange baste & gravy

Ingredients:

  1. ¾ cup Orange juice
  2. ½ cup brown sugar
  3. ¼ maple syrup
  4. 12 oz. Coca -Cola
  5. Pinch of salt & pepper
  6. 3 Tbs butter melted
  7. 3 Tbs flour

Combine all the ingredients, except the butter and flour, in a pot and bring up to a boil, stirring constantly to keep the sugar from burning.  Keep a close eye on pot as it may boil over as it nears boiling temperature, if it appears about to do that, remove from heat for a moment.  Continue to cook on a slow boil and reduce sauce by about ½.

Once reduced allow to cool and then pour over the ham.  Place the ham in the preheated oven and bake according to package directions.  Baste the ham every 10 -15 minutes until done.

When done remove the ham to a cutting board and cover with foil.  The sauce in the pan should be now reduced to about 1 cup, if it appears to be less add a little more orange juice.

Place the pan with the juice onto the stove top burner and turn to high.  Mix the flour with the melted butter stirring until you have a smooth paste roux.  Spoon the roux into the sauce and whisk until it thickens.  Strain through fine mesh sieve and serve on the side.

BBQ Pork Loin with Coca Cola BBQ Gravy

A few years spent in North Carolina introduced us to a number of different ingredients to use in recipes such as potato chips and Coca Cola.  So as I was pondering what to do with the pork loin last night I thought back to that time and came up with this BBQ gravy that came out quite nice.

Coca Cola BBQ Gravy

Ingredients

  1. 1 cup ketchup
  2. ½ cup Coca Cola
  3. ½ cup brown sugar
  4. 2 Tbs Lea & Perrins Worcestershire Sauce
  5. 1 shallot finely diced
  6. 1 clove of garlic finely diced
  7. 2 -3 dashes Tabasco sauce

In a sauce pot place all the ingredients and bring to a boil, stirring to keep sugar from burning.  Once a boil is reached remove from the heat and set aside.

BBQ Pork Loin

  1. 4-5 pound Pork loin
  2. 2 Tbs Flour
  3.  2 Tbs 1/2 & 1/2
  4. Lawry’s seasoning salt and pepper

Take a pork loin season lightly with Lawry’s seasoning salt, and pepper on all sides.  Brown lightly on all sides.

Once browned, place in the slow cooker and pour the BBQ sauce over it, turn to cover, place lid on and cook for about 4 hours basting the top with the sauce every 15 minutes or so.  Just before serving, remove the roast from the pot turn heat up to high, and in a small container or bowl take 2 tablespoons of flour and 2 tablespoons of ½ & ½ and mix thoroughly and pour into the BBQ Sauce in the slow cooker  and stir to combine and thicken.  Slice the roast thin and serve the gravy on the side
