Honey Mustard Chicken

My first thoughts were not to make Honey Mustard Chicken, but a chicken Dijonnaise, which is hard to do when you are out of Dijon mustard.  A few tweaks to accommodate what we have in store and I came up with a very nice tasting recipe.  The recipe is for two so if your cooking for more, just multiply the ingredients.

Ingredients for Honey Mustard Chicken

  1.  2 Chicken Breasts
  2. 1 Tbs olive oil
  3. Salt and Pepper
  4. 1 medium onion diced
  5. 1 clove garlic diced
  6. 1/4 cup dry white wine
  7. 1/4 cup honey mustard
  8. 3/4 cup chicken stock
  9. 2 tsp dried tarragon
  10. 3 Tbs butter

Directions for Honey Mustard Chicken

Salt and pepper all sides of the chicken.

In a saute pan large enough to hold the chicken in a single layer add the olive oil and on medium to medium high heat brown the chicken on both sides.

Remove the chicken to a plate and add the onion to the pan and cook until softened and lightly browned, add the garlic and cook for a few minutes more.

Once the onions are lightly browned add the wine and deglaze the pan.  Let the wine reduce by about half and then add the mustard, stock and tarragon and whisk until smooth being careful to scrape up any bits still on the bottom of the pan.

Place the chicken back into the pan and cover and cook on medium heat for about 20 – 25 minutes until the chicken is done and the sauce is thickened.  Take the chicken out of the pan and hold on a warmed plate.  If the sauce doesn’t look thick enough,  turn the heat up on the pan and reduce.  Once the sauce is thickened add the butter and whisk until it is emulsified completely.  Taste and adjust seasoning if necessary  Place the chicken back into the pan to coat, and serve, spooning more sauce over the top. Take the remaining sauce and serve on the side.

Goes great with egg noodles tossed in butter and bread crumbs, and perfectly cooked carrots:   http://www.rantsravesandrecipes.com/perfect-carrots-everytime

One of the great things about a baked ham is the leftovers.  So many choices of what to do, so many great recipes.  This one is a classic just a few ingredients simple to make, you can even do this all in one pot, so there’s less work for the scullery maid.

Directions for Bow Tie Pasta with Ham+ Peas

In heavily salted water cook the pasta.

I’m really not a “pasta and peas pup”, more meat and potatoes so I only give this recipe 3 paws, no reflection on the cook.

Ham and Coca-Cola and Orange Gravy

Ham and Coca-Cola and Orange Gravy

Ham was on sale at the grocer’s so we bought one.  Honey baked has always been a holiday favorite so I thought some sort of sweet glaze and gravy to go with it.  So I came up with the following recipe, baked ham & coca-cola and orange gravy.  It’s sweet, goes great with the ham and is easy to assemble.  The ham called for being baked about 20 minutes per pound and it was 7 pounds so the entire process baked for about 2 hours 20 minutes at 325° so this worked well for the gravy.  I used a large cast iron fry pan to bake the ham in and it works well, it holds the heat and shortens the time to make the gravy.

Directions for  Ham and Coca -Cola and Orange Gravy

In a large cast iron fry pan, place the ham and score the rind in a diamond pattern.

Coca -Cola and Orange baste & gravy

Ingredients:

  1. ¾ cup Orange juice
  2. ½ cup brown sugar
  3. ¼ maple syrup
  4. 12 oz. Coca -Cola
  5. Pinch of salt & pepper
  6. 3 Tbs butter melted
  7. 3 Tbs flour

Combine all the ingredients, except the butter and flour, in a pot and bring up to a boil, stirring constantly to keep the sugar from burning.  Keep a close eye on pot as it may boil over as it nears boiling temperature, if it appears about to do that, remove from heat for a moment.  Continue to cook on a slow boil and reduce sauce by about ½.

Once reduced allow to cool and then pour over the ham.  Place the ham in the preheated oven and bake according to package directions.  Baste the ham every 10 -15 minutes until done.

When done remove the ham to a cutting board and cover with foil.  The sauce in the pan should be now reduced to about 1 cup, if it appears to be less add a little more orange juice.

Place the pan with the juice onto the stove top burner and turn to high.  Mix the flour with the melted butter stirring until you have a smooth paste roux.  Spoon the roux into the sauce and whisk until it thickens.  Strain through fine mesh sieve and serve on the side.
